Recipe for 2 servings
Main Ingredients: 2 packets samlip udon noodles 4 fresh prawns 1 hard-boiled egg Vegetable of your choice (we use spinach) Seaweed and sesame (for garnishing)
Soup base: 4 cups water 1 stalk spring onion, chopped 3 tbs miso paste (or more, according to your preference)
Bring to boil 4 cups of water Add spring onion Mix in miso paste and let it simmer for about 15 min While soup is simmering boil noodles in another pot Drain and place noodles in serving bowl (Add chilli oil to miso soup if you like it spicy) Add vegetble, prawns and other ingredients of your choice into simmering miso soup Let miso soup simmer until prawns are cooked, remove from fire Pour miso soup over udon and garnish with sesame and seaweed
